Recipe: Delicious Spelt and Almond Gluten-Free Waffles

This is a very fast and easy, kid-approved recipe. I use free range organic eggs, organic milk, and fine ground sea salt. But i'm sure it should work just as fine with non-organic ingredients.

 

Ingredients:

 

- 1   1/4   cups of Spelt flour

- 3/4    cup almond meal

- 1 TBS baking powder

- 3 eggs

- pinch of salt

 

Preparation:

 

1) Get your waffle machine going, so it it hot and ready by the time you are ready to pour the mix.

 

2) Put the eggs, milk, and salt in the blender. In a medium bowl, mix with a spoon the spelt flour, almond meal, and baking powder. Then add the mix to the blender. Blend all the ingredients in high speed until you don't see clumps of flour in the mix.

 

3) Pour your mix in your waffle machine. They will be ready when they are golden.

 

Eat with your favorite fruits, nut butters, etc.
